Enjoy this great Apple Cheesecake with a glass of Richter Red wine. Perfect for a non-traditional Thanksgiving dessert!

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup finely chopped pecans
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter, melted
  • 2 (8 ounces) packages cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 4 cups thinly sliced peeled apples
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped pecans

    Preheat oven to 350° F. Stir together graham cracker crumbs, 1/2 cup finely chopped pecans, 3 tablespoons sugar, 1/2 teaspoon cinnamon and butter; press onto bottom of 9 inch springform pan. Bake 10 minutes.

    Beat cream cheese and 1/2 cup sugar in large mixing bowl at medium speed with electric mixer until well blended. Add eggs, one at a time, mixing well after each is added. Blend in vanilla; spoon evenly over crust.

    Toss apples with combined 1/3 cup sugar and 1/2 teaspoon cinnamon. Spoon apple mixture over cream cheese layer; sprinkle with remaining chopped pecans.

    Bake 1 hour and 10 minutes. Allow to cool for several minutes. Run a thin knife around the edge of the cheesecake to help loosen from pan. Cool completely before removing rim of pan. Chill until ready to serve.
