Lemon Angel Meringue Cake
Enjoy with a glass of Liberty Vineyards Cool Cat wine.
- 1 angel food cake mix (or to make it extra easy, buy a pre-made angel food cake)
Ingredients needed per the cake mix
1 jar (10 ounces) lemon curd
4 egg whites
3/4 teaspoons cream of tarter
1/4 cup sugar
- Bake angel food cake mix per package directions. After removing from oven, invert cake pan; cool completely. Run a knife around side and center tube of pan. Remove cake from pan. With a serrated knife, split the cake into two horizontal layers. Place bottom layer on an ovenproof plate. Spread the bottom layer with lemon curd (for easier spreading, place opened jar of lemon curd in microwave oven for 20 to 30 seconds). Place top layer of cake back on the bottom layer.
For meringue, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high speed, until stiff peaks form. Spread over the top and sides of cake. Bake the cake at 350° until peaks are golden brown and dry. Remove from oven and allow to cool. Enjoy with a glass of Cool Cat. Refrigerate leftovers.
