Key Lime Cheesecake Bars
- 2 cups graham cracker crumbs
1 cup finely chopped macadamia nuts
2-3/4 cups sugar, divided
6 tablespoons melted butter
1 egg white, lightly beaten
2 (8-oz.) packages cream cheese, softened
1/2 cup evaporated milk
4 eggs, slightly beaten
2 tablespoons key lime zest (regular limes may be substituted)
1/3 cup fresh key lime juice (regular limes may be substituted)
1/2 teaspoon baking powder
1/4 cup flour
Powdered sugar for garnishing
- Preheat oven to 350° F. In a medium bowl, combine graham cracker crumbs, chopped macadamia nuts, 1/2 cup sugar and melted butter. Add egg white, mix well. Press mixture into the bottom of a 13” x 9” baking pan; bake for approximately 8 minutes.
In mixer, combine cream cheese and 1/2 cup sugar; beat at medium speed until smooth. Add evaporated milk, beating until well combined. Spoon cream mixture evenly over the crust. Bake for 15 minutes, remove from oven and let cool for 10 minutes.
In a medium bowl, combine remaining 1-3/4 cups sugar, eggs, lime zest and lime juice, whisking well.
In a small bowl, combine and flour and baking power. Add this to the egg mixture, whisking well to combine. Pour this mixture over the cream cheese mixture. Bake for 45 minutes, or until a wooden toothpick inserted in the center comes out slightly sticky. Cool Completely. Garnish with powdered sugar.
