Orange Carrot Cake
Enjoy this tasty carrot cake with a glass of Lucy's in the Sky wine.
Ingredients - Cake
- 3 cups all-purpose flour
- 2 cups sugar
- 1 cup flaked coconut
- 2 1/2 teaspoons baking soda
- 2 1/2 teaspoons cinnamon
- 1 teaspoon salt
- 2 cups (approx 3-4 medium) shredded carrots
- 1 1/4 cups canola oil
- 2 teaspoons vanilla extract
- 1 teaspoon grated orange peel
- 11 oz can mandarin oranges, undrained
- 3 medium eggs
Ingredients - Frosting
- 8 oz. pkg cream cheese, softened
- 2 tablespoons butter, melted
- 1 teaspoon vanilla
- 3 cups powdered sugar
Instructions
- Heat oven to 350 degrees F. Grease (not oil) 13x9-inch pan.
- Lightly spoon flour into measuring cup; level off. Then, in large bowl, combine all cake ingredients; beat 2 minutes at high speed.
- Pour into greased pan. Bake at 350 degrees F for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool.
- In medium bowl, blend all frosting ingredients; beat until smooth. Spread over cake; sprinkle with nuts.
