Flourless Chocolate Cake
This flourless dessert is decadent and delicious. Enjoy with a glass of Liberty Vineyards Cabernet Sauvignon.
- 4 ounces semi-sweet baking chocolate
1 stick unsalted butter
3/4 cup sugar
1/2 cup unsweetened cocoa powder
- Preheat oven to 375°. Line bottom of 8” cake pan with waxed paper. Butter the top of the waxed paper and the sides of cake pan. Chop chocolate into pieces. In top of double boiler, melt chocolate and butter, stirring until smooth. Remove from heat and whisk in the 3/4 cup sugar. Add eggs and whisk well. Add cocoa powder to mixture and mix until just combined. Pour into prepared pan and bake for 25 minutes, or until top has formed a thin crust. Cool cake in the pan on a wire rack for 5 minutes; then invert onto a serving plate. May be served with whipped cream, or ice cream, if desired.
