Strawberry Cole Slaw
Ingredients
2/3 cups rice vinegar
3 tablespoons extra light olive oil
3 tablespoons sugar
3 tablespoons honey
2 tablespoons sesame oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 cups fresh strawberries, quartered
5 cups thinly sliced Savoy cabbage
1 cup thinly sliced red cabbage
½ cup chopped green onions (including some of the greens)
½ cup chopped yellow bell pepper
1 cup honey roasted peanuts
Instructions
Whisk together vinegar, olive oil, sugar, honey, sesame oil, salt, and pepper in a large bowl. Gently stir in all remaining ingredients, except the strawberries and peanuts, until well coated. Cover and refrigerate at least one hour, or overnight. Before serving, stir in strawberries and peanuts. Enjoy!
