Bacon Carbonara

Pairs well with Liberty Vineyards Diamond, Cat Noir or Rosé of Marquette wine.


  • 12 oz. box fettuccine 1 tablespoon olive oil 6 tablespoons butter 1 cup finely chopped onion 7 slices bacon, chopped 8 ounces baby bella mushrooms 1-1/2 cup light cream 5 ounce package freshly shredded parmesan cheese


  • Cook pasta in a large pot of salted boiling water, per the instructions on the package. Drain well. Meanwhile, heat a frying pan over medium-high heat. Add oil, butter, chopped onions, bacon and mushrooms. Cook, stirring for 5 minutes or until bacon is crisp and mushrooms are tender. Add the light cream. Bring just to a boil. Reduce heat and simmer 2 minutes or until slightly thickened. Add pasta and cheese to pan. Combine thoroughly. Heat another minute or two. Season with salt and pepper and serve.
