Cheesy Sun Dried Tomato Spread
2 pkg (8 oz. each) cream cheese, softened
2 cups mayonnaise
1/4 cup finely chopped onion
3 garlic cloves, finely minced
1 (7.5 oz) jar oil-packed sun-dried tomatoes, drained and chopped
2/3 cup chopped roasted sweet red peppers (from jar)
2 cups (8 oz.) shredded mozzarella cheese
2 cups (8 oz.) shredded Italian cheese blend
1/2 cup (4 oz.) shredded Parmesan cheese
Crackers or sliced baguette, for serving
In a large bowl, combine the cream cheese, mayonnaise, onion and garlic until well blended. Stir in drained and chopped tomatoes and roasted red peppers. Stir in mozzarella cheese, Italian cheese blend, and ¾ cup of the Parmesan cheese.
Spoon mixture into a greased 13” x 9” baking dish. Sprinkle with the remaining 1/4 cup Parmesan. Bake, uncovered, at 350° F for 18-22 minutes or until edges are bubbly and top is lightly browned. Serve with crackers or baguette slices.
