Tomato, Bacon and Smoked Gouda Soup
Enjoy with a glass of Liberty Vineyards Dry Diamond or Diamond Wine
Ingredients
- 4 cans (14.5 oz each) diced tomatoes
- 2 cups tomato juice
- 3 slices cooked, crumbled bacon
- 1 cup Yancey's Fancy Bacon Smoked Gouda, shredded
- 8 oz cream cheese
- 1 tablespoon fresh basil, finely chopped
- salt and pepper to taste
- sour cream for garnish, if desired
- additional cooked, crumbled bacon for garnish, if desired
Instructions
- Combine diced tomatoes and tomato juice in medium pot. Simmer for 20 minutes. Add Gouda, cream cheese and crumbled bacon. Stir and continue to heat on low until cheese is melted. Add fresh basil and salt and pepper. Remove pot from heat and blend all ingredients until smooth using an immersion blender (or blend in blender in small batches). Garnish with a dollop of sour cream and crumbled bacon.
